Actually born into the restaurant. Ugo Alciati was a predestined who, when he was 9 he was already "playing" with his mother Lidia in the kitchens of Guido, the family restaurant that played an important role in the history of modern Italian cuisine. Home to innovative concepts that were not that trendy at the time  – top quality products, development of the local area, but also the idea of conceiving a restaurant as an experience which must be lived in full by customers, as a true training place – the restaurant of Costigliole in which Ugo started working "full time" when he was 15  (and he hasn’t stopped since then) left a deep imprint on him as well as on his  brothers Andrea and Piero.

In 2003 he moved to Pollenzo, inside the Agency hosting Banca del Vinoe l’Università di Scienze gastronomiche (the Wine Bank of the University of gastronomic Sciences), Ugo and Piero – his brother always by his side in the dining room and in the cellar – in the summer of 2013 he made a second important move to the Villa Reale Tenuta Fontanafredda  in Serralunga d'Alba (Cuneo), full in the heart of the Langhe. An estate surrounded by vineyards hills with 85 spectacular acres featuring vines for nebbiolo, barbera, dolcetto, moscato. Here the beautiful story of one of the legendary families, icon of  the Italian quality catering system, goes on.

His cuisine is deeply based on local products (about 90% are from Piedmont) but it is not "traditional" in the classic sense, as far as techniques and ideas are concerned.
