Michelangelo Mammoliti was born in Giaveno and in nearby Guarene, close to Alba. he began to work in the kitchen of the Restaurant La Madernassa, in the exact place where the Langhe meet Roero. His top experiences include Gualtiero Marchesi, first at L'Albereta, his restaurant in Erbusco, Franciacorta, and later in the refined Marchesino. However, it's the meeting with Stefano Baiocco, two-starred Michelin since 2014, that changed Michelangelo's life. Stefano and his Villa Feltrinelli in Gargnano surrounded by herbs, buds and all kinds of edible flower. Then a very young Michelangelo began his pilgrimage on French soil, which will last over five years, working at the "court" of the world's best chefs including: Alain Ducasse (who managed to run at the same time 3 three-starred Micheln restaurants in three different countries, having received on the whole in his career 21 Michelin stars), Pierre Gagnier (three Michelin stars) and Yannick Alléno, the three-starred chef of the Pavillon Ledoyen in Paris. It's with them that Michelangelo forged his philosophy, laying the foundations his way of cooking today which is based on 3 key words: demand, excellence and rigor. His journey continues in the kitchen of Marc Meneau (three stars in the Michelin Guide 1984-1999 and from 2004 to 2007) in Saint Père sous Vézelay from whom Michelangelo learns the deepest passion for cooking that he's trying to use  in every dish to meet the expectations of his guests.
