For the gourmand public of the Alba Fair, the chefs Chef Filippo Cavalli (Osteria I Mascalzoni-Parma), Andrea Nizzi (restaurant 12 Monaci – Fontevivo Parma), Simone Strinati (San Faustino – Fidenza Parma) and Raffaella Olivieri (Ristorante da Rita – Valditacca Parma), will present some great classics of the Parma cuisine: from the ravioli of the Duchess with ricotta and marinated strolghino to the Spalla cotta of San Secondo with its mustard foam and confetti, down to the desserts with zabaglione mousse with three liqueurs, alongside sbrisolona crumble cake and cherries in alcohol.
