Chef Alessandro Rossi – Barbagianni

Born on April 20, 1991 in Chiusi, in the province of Siena, he grew up with the ambition of becoming a chef. After attending hospitality school in Chianciano Terme (SI) at the renowned Pellegrino Artusi Institute, he immediately began working.
First with Filippo Germasi at the Zafferano restaurant in Città della Pieve (PG), where he deepened his knowledge of Umbrian and Tuscan traditions, then with Stefano Ciavatti, the “genius and unruly spirit” of seafood cuisine.
After a brief experience with Alessandro Dal Degan in Asiago, he felt it was time to return to his homeland. He became chef of the restaurant Leggenda dei Frati and partner of Filippo Saporito, initially at the San Giovanni d’Asso (SI) location and later at Villa Bardini in the center of Florence.
He learned to understand Tuscan ingredients in every detail and to transform them into a narrative on the plate, conveying emotions, memories, and the culture of the region. This is confirmed by the Michelin Star, awarded in 2016, when Alessandro was only 25 years old.
In June 2020, the chef moved to Marina di Grosseto, at Ristorante Gabbiano 3.0. There, he confirmed his talent and once again retained the Michelin Star.
After an initial collaboration as a consultant, from 2026 he became the executive chef of the restaurant Barbagianni in Colle di Val d’Elsa, where he develops a contemporary Tuscan cuisine focused on the dialogue between the garden, the territory, and the culture of both inland areas and the Tyrrhenian coast.
Under his direction, in May 2026, the restaurant entered the Michelin Guide selection, marking the beginning of a new chapter for Barbagianni.
