Chef Fabio Ingallinera* – Ristorante Il Nazionale

Fabio grows up in Mazzarrone, in Catanese Sicily. After graduating from the Hotel Institute of Modica begins a path that sees him alternating between fieldword and school education.
His school education comes from ALMA, where in addition to deepening practical skills, he has acquired management knowledge.
Professional experiences have shaped and inspired his idea of cooking. It starts from its island with the restaurant DUOMO di Ciccio Sultano, 2 Michelin stars in that of Ragusa Ibla, then immediately reaches Cuneo without dropping but landing in one of the most significant cuisine of Piedmont: the Antica Corona Reale di Cervere under the guidance of Chef Gian Piero Vivalda.
Here he discovers a new land where he also finds his Sicily: in all the love for culinary traditions and the culture of eating well. This is what brings two geographically distant regions closer together and makes Fabio fall in love until he makes the decision to make it his “second” home.
However, before he returns to his Sicily to explore a new world, that of the great hotel catering The Ashbee hotel in Taormina.
Later Fabio moves permanently to Vernante in the mountains of Cuneo, marrying the idea of the Macario family of the Nazionale restaurant Team that for 7 generations now runs its home between culture, history and tradition. A relationship of trust and esteem is born and it allows Fabio to find fertile land to put into practice the experiences acquired by modeling them to his tastes and his own idea of cooking.
He shares the kitchen with Maurizio, a stronghold of the family tradition and confronts Christian, the maître. The “triple alliance” brings a gradual change in the offer of the Nazionale restaurant: on the one hand an in-depth research into the raw material of the territory, on the other a use of new cooking techniques.

These two elements begin to characterize and identify a proposal that changes the gastronomic offer of the valleys of Cuneo and the gastronomous experts, the guides, the lovers of good food and good drinking elect the Nazionale as a feature of the territory.
Today the experiences acquired and deepened thanks to his continuous training lead Fabio to support Roberta, the maitre patissière of the Nazionale in the opening of the “Bottega Nazionale”: a small shop that becomes corner of paradise for the good taste: Oven, Coffee and Ice Cream.

No variations can be made in case of food allergies, intolerances and special dietary regimes.
The Alba White Truffle slice is not included in the fee as it usually follows the daily quotation of the Truffle Exchange.
DURATION: about 1 hour and a half.

Children who participate in cooking shows by tasting the dish, must be provided with a ticket. Please inform info@fieradeltartufo.org of the presence of children in the room who do not take part in the tasting in order to arrange a chair near the parents within 72 hours.

The Hall is dedicated to the Alba writer Beppe Fenoglio (1922 - 1963), author among others of the novels Il Partigiano Johnny, Una questione privata, Primavera di bellezza. In the splendid monumental building of the Maddalena courtyard, the centre of Alba's cultural life, two large works by Gallizio face each other on the walls of the conference room dedicated to Beppe Fenoglio, set up during the Truffle Fair to host the Cooking Show.
