THE CHEFS OF “IL LUOGO DI AIMO E NADIA”
Fabio Pisani, born in 1978, originally from Molfetta (Bari), where he graduated as a chef, has worked in some of Europe’s great maisons: three years in Paris at the Grand Vefour, two years in London at the Waterside Inn, one year at the Dal Pescatore restaurant in Canneto sull’Oglio.
In 2005, together with Alessandro Negrini, he arrived at Il Luogo di Aimo e Nadia, bringing with him a passion for work which is capable of conveying to the customer the “heartbeats” he puts into every dish.
He works as a consultant in the restaurant industry and is Master Chef in professional cooking schools. In 2014 he was awarded by Identità Golose, together with Alessandro, the title of “Best Chef”. In the same year Il Luogo di Aimo e Nadia became a member of the Relais&Chateaux association, thanks also to the support of Fabio and Alessandro, and in 2016 joined the prestigious Les Grandes Tables du Monde.
Alessandro Negrini, who was born in 1978 in Caspoggio in Valmalenco and graduated from the Hotel School of Sondrio, worked at the Hotel Palace in Saint Moritz and at the Gallia Palace in Punta Ala before he came to Il Luogo di Aimo e Nadia, where he stayed for three years before continuing his training: two years at the Domaine de Châteauvieux in Geneva and one year at the Dal Pescatore restaurant in Canneto sull’Oglio. This is where Fabio and Alessandro met, and since then they have been friends in life and inseparable companions in the workplace. In 2005 Alessandro returned to Il Luogo di Aimo e Nadia, bringing with him Fabio Pisani and the desire to undertake a project with Stefania Moroni to build a future for the new generation of Il Luogo. In 2014 he was awarded by Identità Golose, together with Fabio, the title of “Best Chef”. In the same year Il Luogo di Aimo e Nadia became a member of the Relais&Chateaux association, thanks also to the support of Fabio and Alessandro, and in 2016 joined the prestigious Les Grandes Tables du Monde.
Il Luogo di Aimo e Nadia is the restaurant in Milan that has been an emblem of Italian gastronomic identity in the world for almost 60 years. In this “Luogo”, a series of dishes that have marked the evolution of Italian cuisine were created: excellent and exclusive raw materials, the result of scrupulous research and selection to bring little-known or even forgotten ingredients and techniques back into the limelight. An approach based on great respect for the original flavours, ingredients and Italian gastronomic culture.
In Summer 2018, the project to renovate the Luogo and create a new space attached to the restaurant with an open kitchen – Theatrum dei Sapori – was completed. Conceptually, this space is closer to a domestic environment, designed for guests who want to live a more immersive experience in the kitchen of Il Luogo and for all those who want to explore the world of cooking, whether out of passion or professional ambition, through direct experience, in-depth study and a better knowledge of the history of Italian gastronomy, the raw materials and the territory.
In April 2018, chefs Negrini and Pisani, already owners together with Stefania Moroni of Il Luogo di Aimo e Nadia, launched their first entrepreneurial project outside their maison and opened, in collaboration with Rossana Orlandi and Etro, BistRo Aimo e Nadia, a bistro that combines the charm of a design location with the joys of taste and conviviality.
In the same year, the partnership with Intesa Sanpaolo was sealed. Intesa Sanpaolo chose to entrust Aimo e Nadia with the overall management of the catering services inside its Piazza della Scala headquarters, which are adjacent and connected to the Galleria d’Italia museum centre. Here, in November 2018, Voce Aimo e Nadia, a gourmet café and restaurant, opened to the public. In the summer of 2020 Voce is enhanced by Voce in Giardino, a restaurant located in the beautiful Garden of Alessandro Manzoni.
