
Inside the Castle of Roddi, in one of the most beautiful Italian cooking schools, through theoretical-practical classes, you will be taught the traditional recipes of the Langhe, Monferrato and Roero and the great iconic dishes of important chefs in a truly unique location.
At the Castle there are 7 modern steel workstations fully equipped with all kitchen utensils.
Participants are always personally involved and will have the chance to taste what is being prepared, paired with a glass of wine and a white Alba truffle gill. The educational material with the recipe and the exclusive Frette apron will be given free of charge.
Each participant will be presented with a gift:
- the kitchen apron with the International Alba White Truffle Fair logo
- the recipe prepared with the chef
- the handbook “All about the Alba White Truffle”
There are 7 workstations that can be used individually or shared in pairs.
The course has a limited number of participants and a maximum attendance of 14 people.
The workstations are fully equipped with all the necessary items for theoretical and practical lessons.
THE CHEF
Luca Politano was born in Cuneo in 1988 to a family of restaurateurs and then decided to follow in the footsteps of the family by enrolling in the G.Giolitti Hotel School in Mondovì.
After finishing his studies he decided to go to France and start his journey from the basics of French cuisine.
Increasingly starved by this profession, he managed to join some of the most prestigious brigades of great chefs, including Enrico Crippa, Carlo Cracco, Heinz Beck, Yannick Alléno and Victor Arguinzoniz.
These experiences of work but above all of life, allowed him to acquire notions, techniques but above all to understand the thought of these great masters.
At the beginning of 2020 he decided to return home to his family’s historic restaurant and to be able to express what today is his vision of cooking made of so many contaminations.
