Chef Marco Ambrosino – Teatro Sociale “G.Busca” of Alba

A unique opportunity to enjoy the enogastronomic richness of our region and its rarest and most precious product: the Alba White Truffle, but also the extraordinary cultural heritage of Alba, a city with pre-Roman origins, with a wealth of archaeological finds and evidence of its glorious past, known throughout the world for its products of excellence and, since October 2017, named Creative City for Gastronomy by UNESCO.


Born in 1984 in Procida (just like Vincenzo Scotto Jonno, the first creator of the 19th century café), Marco Ambrosino signs the gastronomic proposal of Sustanza and the bistro ScottoJonno, as well as the cocktail bar Archivio Storico (owned by Luca Iannuzzi, who combines mixing with Neapolitan art and culture). His years of study came to a sudden halt at a crossroads. At the age of 23, he was offered a great opportunity: to join the team of a Michelin-starred restaurant in Ischia, the Melograno, under the direction of the chef Libera Iovine. At the Melograno his life changed: he found love (he met his future wife there) and his vocation for cooking. He was attracted to gastronomy because it combines ingredients and techniques, but above all study, philosophy, history, traditions, culture, art and accounting. After five years in what was then the only Michelin-starred restaurant in the area, he embarked on a journey of discovery that would take him to the court of great chefs, first and foremost to Noma in Copenhagen, the best restaurant in the world at the time, according to The World’s 50 Best Restaurants. The restaurant’s chef, Rene Redzepi, had shown the world that it was possible to build the identity of a cuisine on Nordic ingredients, which had previously been little considered because of their scarce biodiversity. “It was in this context that I realised that if Rene could create such a strong identity cuisine from scratch, it could be done anywhere”. After returning to Italy, in 2014, he found his habitat in Milan, at the restaurant 28 Posti, where he began to propose his idea of cuisine, connecting the dots of his life. Thanks to the support and discussions with his architect wife Simona Castagliuolo, in 2019 Marco founded Collettivo Mediterraneo, a social and cultural inclusion project that aims to tell the story of multiculturalism, biodiversity and the experiences of women and men who have built history as inhabitants of the Mediterranean. In 2021, Marco felt that the Milanese period was coming to an end, he perceived the end of a cycle, which then corresponded to the call of Luca Iannuzzi, an entrepreneur who has always had a vocation for rediscovering the Neapolitan character, the key player in the rebirth of a piece of Naples, the Galleria Principe di Napoli, ScottoJonno, a café chantant, an architectural jewel in a state of decay, and the restaurant Sustanza inside, which opened in June 2023. With this new adventure, Marco has the opportunity to go back to where it all began.  Now he is designing his own menus, taking an anthropological approach to cooking, bringing tradition to the table and talking about his Mediterranean.

It is well-known and kind of unique throughout Europe for its “double” structure, consisting of a historic 19th-century “horseshoe-shaped” hall, a modern hall with stalls and gallery, and a stage located right in the middle.

In its premises, a high-level theatre season is organised every year featuring concerts, presentations, meetings and conferences.
