Chef Massimiliano Musso – Ristorante Albergo Ca’ Vittoria

Inside the Castle of Roddi, in one of the most beautiful Italian cooking schools, through theoretical-practical classes, you will be taught the traditional recipes of the Langhe, Monferrato and Roero and the great iconic dishes of important chefs in a truly unique location.

At the Castle there are 7 modern steel workstations fully equipped with all kitchen utensils.
Participants are always personally involved and will have the chance to taste what is being prepared, paired with a glass of wine and a white Alba truffle gill. The educational material with the recipe and the exclusive Frette apron will be given free of charge.

Each participant will be presented with a gift:

  • the kitchen apron with the International Alba White Truffle Fair logo
  • the recipe prepared with the chef
  • the handbook “All about the Alba White Truffle”

There are 7 workstations that can be used individually or shared in pairs.
The course has a limited number of participants and a maximum attendance of 14 people.
The workstations are fully equipped with all the necessary items for theoretical and practical lessons.


THE CHEF

At Cà Vittoria, an elegant 18th-century house located in Tigliole in the heart of the Colline Alfieri, a stone’s throw from the Langhe and Roero, Massimiliano, a young Michelin-starred chef who follows in the footsteps of his grandmother Gemma and mother Sandra, works in the kitchen to prepare delicious recipes from the great Piedmontese tradition and more innovative dishes, always carefully balanced in their combinations.

Dishes are prepared with knowledge and skill using excellent ingredients from the local area. Many vegetables, fruits and flowers come from the home garden dedicated to Nonno Aldo.

Massimiliano also treasures the Michelin Star gained by Nonna Gemma in 1997. He also has his own personal journey full of prestigious assignments including menus at the UN Palace in New York with the Stelle Piemontesi (Piedmont Stars), he is member of the Italian Pastry, Ice Cream and Chocolate Federation, participation in the World Summit in Hong Kong, etc., and is also Chef at Casa Saclà.

At Ca’ Vittoria, a restaurant that has also 10 well-kept rooms, you can perceive an atmosphere of class, refinement and professionalism that perfectly matches the friendliness, openness and affability of the service now run with grace and attention by Valentina, chef Massimiliano’s wife.

In the superb setting of the Castle of Roddi, the so called "Cucina della Comunità" (Community Kitchen) is presented: a symbolic place that welcomes chefs, excellent raw materials and producers. The pertinence of the Castle of Roddi becomes a venue where the Langhe, Monferrato and Roero areas interact with the world, offering an experience of contamination between history, culture, art, enogastronomy. In the "Community Kitchen", cooking classes led by national and international chefs will be held. and dinners with starred chefs will be organised byinvolving producers of excellent raw materials that will be cooked and narrated by the protagonists.
