CHEF Philippe Léveillé** – miramonti l’altro

Miramonti L’Altro is an embassy of haute cuisine in Italy, a restaurant for those who believe that diets can be postponed until tomorrow, butter is a Breton affair, and frog legs—well, c’est mon cocorico!

Thus, away with the siphons, and no complexes; on the plate, the pride of a great neoclassical chef takes center stage, applied even to the emotions evoked by Brescia’s specialties. Enough to move even the most hardened avant-gardist! Born in Nantes in 1963, Philippe attended the Saumur Hotel School before he started to travel around the world, interrupted only by humanitarian service in Somalia, Ethiopia, and Yemen for the Red Cross from 1981 to 1982. From his Parisian debut at the Hotel Windsor Clovis, he went on to work at the Hilton Kennedy Hotel in New York, the Boucairre Meridiane restaurant in Martinique, the Vis Palace Grand Corniche in Monte Carlo and then to Le Maschere in Iseo, from 1987 to 1991. After a year at the Antico Ristorante Ponte di Briolo, he finally arrived on October 25, 1992, at Miramonti di Caino with the Piscini family, whom he followed in 1994 to the new and definitive location of Miramonti L’Altro in Concesio. Here, Philippe’s great technique, mastering the academy, humbly meets the unsurpassed savoir-faire of Mary Piscini, who imparts the secrets of cult dishes like mushroom risotto with mild mountain cheese before leaving the kitchen entirely to him. Philippe, who declares himself Italian (but perhaps understands Brescia’s opulence precisely because he is Breton, suggests Paolo Marchi), never misses an opportunity to pay homage to her, advocating for greater recognition of the role of women in the kitchen.

Two Michelin stars since 2001, with his Italian restaurant “Miramonti L’Altro,” he is described by the most influential industry magazines, including “Grande Cucina,” as one of the most representative chefs of the Italian culinary scene. He is known as the Breton chef who best combines French cooking techniques with traditional Italian dishes. In 2012, he ventured to Hong Kong with the restaurant “L’Altro,” where he worked as a consultant until April 2017. In 2014, he was invited as a guest chef for an episode of MasterChef 3. That same year, he co-hosted The Chef 2 with Chef Oldani and Rossella Brescia. In 2015, he participated in the Pechino Express adventure with his friend Ciccio Sultano as the “Stellati” duo. Also in 2015, he wrote his first book, “La mia vita al burro” (“My Life with Butter”), the adventurous biography of a Breton chef who cooks Italian in Brescia and Hong Kong. And he has had a soul ingredient that has accompanied him since childhood, butter. In 2016, he began a collaboration with the monthly magazine “Dentro Casa.” On September 11, 2017, the new show “Chopped” debuted on Channel 33 of digital TV, featuring him alongside Rosanna Marziale, Misha, and Gianmarco Tognazzi. In 2018, he served as a judge on “Il ristorante degli Chef” on Rai 2, together with Andrea Berton and Isabella Potì.

The Hall is dedicated to the Alba writer Beppe Fenoglio (1922 - 1963), author among others of the novels Il Partigiano Johnny, Una questione privata, Primavera di bellezza. In the splendid monumental building of the Maddalena courtyard, the centre of Alba's cultural life, two large works by Gallizio face each other on the walls of the conference room dedicated to Beppe Fenoglio, set up during the Truffle Fair to host the Cooking Show.
