Walter Ferretto was born and raised in a family of restaurateurs for three generations.
When he has to decide what future path to take for his life, he gives in to the lure of the kitchen, also influenced by his friendship with such crucial figures for Piedmontese wine as Angelo Gaia and Giacomo Bologna, thanks to whom he understands the great heritage of enogastronomic excellence of which the Langhe is so rich.
He was trained as a chef and gained valuable experience in Italy and abroad, passing through the Auberge de l’Ill, a three-starred restaurant in Illhaeusern in Alsace, Christian Constant’s kitchen at Les Ambassadeurs del Crillon in Paris, and Franco Colombani’s Lombardy kitchen. He returned to Asti, to Cascinalenuovo, in 1986. Here over the years, with his brother Roberto, he renovated the family restaurant, by giving more value to the dishes and modernising the room, creating the right balance between innovation and love for tradition. In 1990 he won his first Michelin Star.
