Gourmet Sunset: A Fine Aperitif Experience by CHEF GIUSEPPE D’ERRICO – Pico Bistrot in madernassa

Born in 1987, he has developed a physical relationship with food based on pure, non-intentional perception. After training at Gualtiero Marchesi’s International Academy of Italian Cuisine, he worked with several Michelin-starred chefs in both Italy and France.

The invaluable teachings of the great Master—who immediately recognized his remarkable personal and culinary talent—opened his mind to travel and ignited an insatiable desire for knowledge. The “artistic” imprint of Marchesi’s cuisine led him to continue his training in the kitchen of one of the most renowned restaurants in the world, a three-Michelin-star institution since 1968: the prestigious Maison Troisgros.

He remained there for six years, growing as a sous-chef alongside Michel Troisgros, his true mentor. In this context, he refined a sensitivity focused on sustainability and an ethical perception of taste. His journey—exploring food as a form of language, the study of pleasure as a fundamental need, and a deep awareness of ingredients—led him to earn a Michelin star in 2018 as Executive Chef of Ristorante Ornellaia in Zurich, as well as a score of 17/20 from Gault & Millau.

At the end of 2021, his encounter with La Madernassa Ristorante & Resort brought him back to Italy, where a shared vision with the ownership proved to be fertile ground for developing and expressing his unique and ever-evolving sensory journey. Within this project also takes shape Pico Bistrot, the more immediate and contemporary expression of his cuisine: a dynamic and convivial space where research is translated into essential, accessible, and deeply distinctive dishes, capable of conveying with lightness and precision the same philosophy that defines his gastronomic vision.
