Ultimate Truffle Dinner: Chef Michelangelo Mammoliti


The Alba White Truffle meets the most prestigious international agro-alimentary excellences

The Ultimate Truffle Dinners are part of the rich programme of great meetings between the Alba White Truffle and the most prestigious international agro-alimentary excellences.

The idea is to match and combine in a most exclusive event, thanks to the top skills of the Michelin starred chefs the Alba White Truffle together with unique elements of international cuisine.

The proceeds of these prestigious events, open to the public, will be donated to the “Breathe the Truffle”project, the first crowdfunding campaign to safeguard the natural environment of the Alba White Truffle.

Michelangelo Mammoliti was born in nearby Giaveno and in Guarene, on the outskirts of Alba.

He has been running the kitchen at La Madernassa Restaurant since 2014. On top of his experiences stands out Gualtiero Marchesi, first at L’Albereta, then in the prestigious Marchesino. However, it was when he met Stefano Baiocco, two Michelin starred chef, that Michelangelo’s life changed. The chef began his pilgrimage to France at a very young age, which would last more than five years, to the court of the best chefs in the world: Alain Ducasse, Pierre Gagnier and Yannick Alléno. It was at their court that Michelangelo forged his philosophy, laying the foundations for what today is his way of cooking and that he cannot do without three key words: demand, excellence and discipline
