It is an hypogeous mushroom

It can only be hunted with a dog

It cannot be cultivated

It grows from roots of specific plants

Its scent is made of 120 volatile molecules

In Piedmont, the harvest season starts on 21st September and ends on 31st January

It is eaten fresh and can be stored for about a week

Before eating, clean with a small brush under running water; once dried, leave it to rest for at least 10 minutes

It should be stored in the fridge, preferably wrapped in blotting paper, in a glass container with a lid

It should not be cooked, and it is always shaved as raw with a special tool with a very sharp blade: the truffle-slicer
